Vegan Chickpea Salad Sandwich
Ingredients
1 can chickpeas (400 g)
¼ cup vegan mayonnaise
1 tablespoon Dijon mustard
1 teaspoon lemon juice
½ teaspoon garlic powder
½ teaspoon onion powder
1 cup celery, chopped
1 cup red bell pepper, diced
Salt and pepper to taste
4 slices whole grain bread
Method
Begin by draining and rinsing the chickpeas.
Using a fork, mash the chickpeas in a large bowl until slightly chunky.
Stir in the vegan mayonnaise, Dijon mustard, lemon juice, garlic powder, and onion powder.
Add the celery and red bell pepper, mixing well. Season with salt and pepper as desired.
Spread the chickpea mixture onto slices of bread to create sandwiches.
