Vegan Chickpea Curry Recipe

Ingredients

– 1 tablespoon olive oil
– 1 onion, chopped
– 3 garlic cloves, minced
– 1 tablespoon fresh ginger, grated
– 1 tablespoon curry powder
– 400 g canned chickpeas, drained and rinsed
– 400 g canned diced tomatoes
– 400 ml coconut milk
– 2 cups fresh spinach
– Salt, to taste

Method

1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and cook until it becomes soft and translucent.
3. Stir in the minced garlic, grated ginger, and curry powder. Cook for another minute.
4. Pour in the chickpeas, diced tomatoes, and coconut milk. Stir well and let it simmer for about 10 minutes.
5. Add the fresh spinach and mix until wilted. Season with salt to taste.
