Delicious Vegan Casserole With Barley And Bulgur Vegetables

Ingredients

– 1 cup cooked barley
– 1 cup cooked bulgur wheat
– 500 ml vegetable broth
– 1 can diced tomatoes (400 g)
– 1 medium zucchini, diced
– 1 bell pepper, diced
– 1 cup corn kernels
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 teaspoon dried herbs (like oregano or basil)

Method

1. Preheat your oven to 180°C.
2. In a large skillet, sauté the chopped onion and minced garlic over medium heat until soft.
3. Add diced zucchini and bell pepper to the skillet. Cook until they start to soften.
4. Stir in cooked barley, cooked bulgur, diced tomatoes, corn, vegetable broth, and dried herbs. Mix everything together well.
5. Transfer the mixture into a baking dish. Bake for 30 minutes until heated through and slightly golden.
