Easy Vegan Banana Peanut Butter Muffins
Ingredients
2 ripe bananas
1/2 cup peanut butter
1/2 cup almond milk
1/4 cup maple syrup
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Method
Preheat the oven to 180°C. Line a muffin tin with paper liners.
In a mixing bowl, mash the bananas with a fork until smooth.
Next, add peanut butter, almond milk, maple syrup, and vanilla extract. Mix until everything is well combined.
In another bowl, whisk together flour, baking powder, baking soda, and salt. Slowly add this mixture to the wet ingredients, stirring gently until just combined.
Spoon the batter into the muffin tin and bake for 18-20 minutes, or until a toothpick comes out clean.
