Ingredients
– 3 ripe bananas, mashed
– 1/3 cup vegetable oil
– 1/2 cup brown sugar
– 1/4 cup maple syrup
– 1 teaspoon vanilla extract
– 1 cup plain flour
– 1 teaspoon baking soda
– 1/2 teaspoon salt
– 1/2 teaspoon cinnamon
– 1/2 cup walnuts, chopped
Method
1. Preheat the oven to 190 ml. Grease a muffin tray or use muffin liners.
2. In a large bowl, mix the mashed bananas, oil, brown sugar, maple syrup, and vanilla until smooth.
3. In a separate bowl, combine the flour, baking soda, salt, and cinnamon.
4. Gradually add the dry ingredients to the wet mixture. Stir until just combined.
5. Fold in the chopped walnuts and pour the batter into the muffin tray. Bake for 20-25 minutes or until a toothpick comes out clean.
