Ingredients
250 ml unsweetened applesauce
1 cup brown sugar
1/2 cup vegetable oil
1 cup almond milk (or any plant-based milk)
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
Method
1. Preheat the oven to 180°C (350°F). Grease and flour a cake pan.
2. In a large bowl, mix together the applesauce, brown sugar, oil, almond milk, and vanilla. Stir until everything is well combined.
3. In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
4. Gradually add the dry ingredients to the wet ingredients. Stir until just combined.
5. Pour the batter into the prepared cake pan. Bake for about 30-35 minutes or until a toothpick comes out clean.
