Ingredients

– 1 avocado, sliced
Method
1. Start by heating a large pan over medium heat. Add the diced onion and chopped red bell pepper. Cook until softened, about 5-7 minutes.
2. Stir in the minced garlic, cumin, and chili powder. Cook for another minute until fragrant.
3. Add the rinsed black beans, corn, and cooked rice to the pan. Mix everything well to combine.
4. Pour in the salsa and let the mixture simmer for about 5 minutes, stirring occasionally.
5. Once heated, serve the mixture in bowls and top with avocado slices.
