Ingredients
– 500 g ash gourd, diced
– 200 ml coconut milk
– 1 tablespoon oil
– 1 teaspoon mustard seeds
– 1 teaspoon urad dal
– 2-3 dried red chillies
– 1/4 teaspoon turmeric powder
– Salt to taste
– Fresh coriander for garnish
– 1 green chili, slit
Method
1. Start by heating oil in a pan over medium heat.
2. Add mustard seeds, urad dal, and dried red chillies to the hot oil. Stir until the mustard seeds pop.
3. Toss in the diced ash gourd and mix well. Cook for about 5 minutes.
4. Pour in the coconut milk and sprinkle turmeric powder and salt. Stir to combine and then cover.
5. Let it simmer for 10-15 minutes until the ash gourd is tender. Garnish with fresh coriander and slit green chili before serving.
