Ingredients
– 4 large potatoes
– 1 cup sour cream
– ½ cup shredded cheese
– 4 tablespoons butter
– ¼ cup milk
– 2 green onions, chopped
– Salt to taste
– Pepper to taste
– Optional: smoked paprika for seasoning
Method
1. Preheat the oven to 200°C. Wash the potatoes well and poke a few holes in each with a fork. Place them in the oven and bake for about 1 hour or until tender.
2. Once baked, let the potatoes cool slightly. Cut each potato in half lengthwise and scoop out most of the insides into a bowl, leaving a little bit around the edges.
3. Mix the scooped potato with sour cream, cheese, butter, milk, green onions, salt, and pepper. Mash everything together until creamy and smooth.
4. Spoon the mixture back into the potato skins, filling them generously. If you like, sprinkle some smoked paprika on top for extra flavor.
5. Return the stuffed potatoes to the oven for another 15–20 minutes, until heated through and lightly golden on top.
