Ingredients
– 4 large potatoes
– 1 cup grated cheese
– 1/2 cup sour cream
– 1/4 cup milk
– 2 tablespoons olive oil
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/4 cup chopped green onions
– 1/4 cup cooked bacon bits (optional)
– 1/4 teaspoon garlic powder
Method
1. Preheat the oven to 220°C. Scrub the potatoes and poke them a few times with a fork. Bake for about 45 minutes until soft.
2. Let them cool for 10 minutes. Cut the potatoes in half lengthwise and scoop out most of the insides into a bowl.
3. Mix the scooped potato with cheese, sour cream, milk, olive oil, salt, pepper, green onions, optional bacon, and garlic powder. Blend until smooth.
4. Stuff the potato skins with the mixture. Place them back on a baking tray and sprinkle with extra cheese if you want.
5. Bake for another 15 minutes, or until the tops are golden. Serve warm and enjoy.
