Method
1. Heat olive oil in a large pan over medium heat.
2. Add diced onion and minced garlic, cooking until they soften.
3. Stir in the sausage meat and break it apart as it cooks.
4. Once the sausage is browned, mix in the diced tomatoes and Italian seasoning, simmering for several minutes.
5. Add the gnocchi, spinach, and dairy-free cream, stirring until everything blends well.
