Method
1. Heat the olive oil in a large pot over medium heat.
2. Add the diced onion, chopped carrots, and celery to the pot. Cook until the vegetables soften, about 5 minutes.
3. Stir in the minced garlic and cook for an additional minute.
4. Mix in the dried thyme and rosemary, followed by the chicken broth. Bring the mixture to a boil.
5. Once boiling, add the shredded turkey and cooked rice. Simmer for 10 minutes before serving.
