Trout Almondine Recipe
Ingredients
4 trout fillets
50 g butter
2 tablespoons olive oil
1/2 cup sliced almonds
2 tablespoons lemon juice
1/2 cup chopped parsley
1 teaspoon salt
1/2 teaspoon black pepper
Lemon wedges (for serving)
Method
Heat a large pan over medium heat. Add olive oil and 25 g of butter to the pan.
Once the butter has melted, place the trout fillets skin-side down. Cook for about 5 minutes.
Carefully flip the fillets and cook for another 3 to 4 minutes until they are golden and cooked through.
Remove the fillets and place them on plates.
In the same pan, add the remaining butter and almonds. Cook until the almonds turn golden brown. Stir in lemon juice, parsley, salt, and pepper. Pour this mixture over the trout and serve with lemon wedges.
