Ingredients
– 500g salmon fillet
– 1 cup brown rice
– 2 cups water
– 1 tablespoon sesame oil
– 1 tablespoon soy sauce
– 1 cup mixed vegetables (like broccoli, carrots, and bell peppers)
– 2 teaspoons sesame seeds
– 2 green onions, chopped
– Salt and pepper to taste
– Lime wedges for serving
Method
1. Rinse the brown rice under cold water, then combine it with 2 cups of water in a pot. Bring it to a boil, then reduce the heat and simmer for 20 minutes until cooked.
2. While the rice cooks, season the salmon with salt and pepper. Heat sesame oil in a frying pan over medium heat and cook the salmon for about 4 minutes on each side or until it flakes easily with a fork.
3. In the same pan, add mixed vegetables and stir-fry for about 5 minutes until tender. Splash some soy sauce over the veggies while cooking for extra flavor.
4. Once everything is ready, fluff the brown rice with a fork and place it in bowls. Top the rice with the cooked salmon and stir-fried vegetables.
5. Finish with a sprinkle of sesame seeds and chopped green onions. Serve with lime wedges on the side.
