Ingredients
– 1 kg ripe tomatoes
– 1 cup olive oil
– 10 garlic cloves, peeled
– 1 tablespoon sea salt
– 1 teaspoon black pepper
– 1 tablespoon fresh thyme leaves
– 1 tablespoon fresh basil leaves
– 1 teaspoon sugar
– 1 tablespoon balsamic vinegar
Method
1. Preheat the oven to 150°C (300°F).
2. Cut the tomatoes in half and place them in a baking dish.
3. Add garlic cloves and sprinkle with salt, pepper, sugar, thyme, and basil.
4. Pour the olive oil evenly over the tomatoes and garlic.
5. Roast in the oven for 2-3 hours until the tomatoes are soft and caramelized.
