Ingredients
– 1 kg ripe tomatoes, cut in halves
– 1 cup olive oil
– 4 cloves garlic, peeled and crushed
– 2 tablespoons fresh thyme leaves
– 2 teaspoons salt
– 1 teaspoon black pepper
– 1 tablespoon sugar
– 1 teaspoon balsamic vinegar
– Optional: fresh basil leaves for serving
Method
1. Preheat the oven to 150°C (300°F).
2. In a large baking dish, combine the tomatoes, garlic, thyme, salt, pepper, and sugar.
3. Pour the olive oil over the mixture and toss gently to coat everything.
4. Bake in the oven for about 2 hours, until the tomatoes are soft and caramelized.
5. Once done, remove from the oven and drizzle balsamic vinegar on top. Serve warm or at room temperature.
