Delicious Thyme Apricot Upside-Down Cake Recipe To Try Today

Ingredients
1 cup of fresh apricots, halved and pitted
1 tablespoon of fresh thyme leaves
½ cup of unsalted butter, softened
1 cup of brown sugar
1 cup of all-purpose flour
2 teaspoons of baking powder
½ teaspoon of salt
2 large eggs
1 teaspoon of vanilla extract
½ cup of milk

Method
1. Preheat the oven to 180°C (350°F). Grease a round cake pan.
2. Arrange apricot halves in the bottom of the pan and sprinkle thyme leaves on top.
3. In a bowl, beat the butter and brown sugar until light and fluffy. Then mix in the eggs and vanilla extract.
4. Combine flour, baking powder, and salt in a separate bowl. Gradually add this to the wet mixture, alternating with the milk.
5. Pour the batter over the apricots in the pan and bake for about 40–45 minutes, or until golden and a toothpick comes out clean.
