Ingredients
– 1 cup quinoa
– 1 can black beans, rinsed and drained
– 1 can chickpeas, rinsed and drained
– 1 can kidney beans, rinsed and drained
– 1 cup cherry tomatoes, halved
– 1/2 cup corn (canned or frozen)
– 1/4 cup red onion, diced
– 1/4 cup fresh parsley, chopped
– 1/4 cup lime juice
– 2 tablespoons olive oil
Method
1. Rinse the quinoa under cold water and then cook it according to package instructions. Allow it to cool after cooking.
2. In a large bowl, combine the black beans, chickpeas, kidney beans, cherry tomatoes, corn, red onion, and parsley.
3. Once the quinoa is cool, add it to the bowl of beans and vegetables.
4. Drizzle lime juice and olive oil over the mixture. Gently toss everything together until well combined.
5. Serve the salad right away or chill it in the fridge for an hour before serving.
