Delicious Thanksgiving Panzanella Salad Recipe To Impress Guests

Ingredients

– 4 cups diced stale bread
– 1 cup cherry tomatoes, halved
– 1 cup cucumber, chopped
– 1 cup bell pepper, chopped
– 1/2 cup red onion, thinly sliced
– 1/2 cup fresh parsley, chopped
– 60 ml olive oil
– 30 ml red wine vinegar
– 1 teaspoon dried oregano
– Salt and pepper to taste

Method

1. Preheat the oven to 180°C and place the bread on a baking tray. Bake for about 10-15 minutes until it’s golden and crispy.
2. While the bread is baking, chop the cherry tomatoes, cucumber, bell pepper, and red onion. Place them in a large bowl.
3. Once the bread is done, allow it to cool slightly. Add the crunchy bread pieces to the bowl with the veggies.
4. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
5. Pour the dressing over the salad, then mix everything gently. Finally, sprinkle chopped parsley on top before serving.
