Delicious Thai Pineapple Vegetarian Fried Rice: No Onion, No Garlic

Ingredients

– 2 cups cooked jasmine rice
– 1 cup pineapple chunks
– 1 cup mixed vegetables (like peas and carrots)
– 1 tablespoon soy sauce
– 1 tablespoon vegetable oil
– 1 teaspoon sesame oil
– 1 teaspoon sugar
– 1/2 teaspoon black pepper
– 2 green onions, chopped
– 1/4 cup chopped fresh coriander

Method

1. Heat vegetable oil in a large pan or wok over medium heat.
2. Add the mixed vegetables and cook for 2-3 minutes until just tender.
3. Stir in the cooked rice, pineapple, soy sauce, sesame oil, sugar, and black pepper.
4. Mix well and cook for an additional 3-4 minutes.
5. Finally, garnish with chopped green onions and fresh coriander before serving.
