Ingredients
– 500 g chicken breast, diced
– 1 ripe mango, peeled and chopped
– 1 cup coconut milk
– 2 tablespoons red curry paste
– 1 tablespoon vegetable oil
– 1 onion, sliced
– 2 garlic cloves, minced
– 1 tablespoon fish sauce
– 1 tablespoon brown sugar
– Fresh coriander for garnish
Method
1. Heat vegetable oil in a large pan over medium heat.
2. Add sliced onion and minced garlic, cooking until soft.
3. Stir in the diced chicken and cook until it turns golden brown.
4. Mix in the red curry paste, coconut milk, fish sauce, and brown sugar, then bring to a gentle boil.
5. Once simmering, fold in the chopped mango and cook for another 5 minutes.
