Ingredients
– 500 g chicken breast, cut into bite-sized pieces
– 1 cup unsalted cashews
– 2 cups broccoli florets
– 1 red bell pepper, sliced
– 2 carrots, sliced
– 3 tablespoons soy sauce
– 1 tablespoon fish sauce
– 2 tablespoons honey
– 2 tablespoons vegetable oil
– 3 cloves garlic, minced
Method
1. Heat vegetable oil in a large pan over medium heat.
2. Add chicken pieces and cook until browned and cooked through. This should take about 5-7 minutes.
3. Stir in garlic, broccoli, bell pepper, and carrots. Cook until vegetables are tender.
4. Mix soy sauce, fish sauce, and honey together in a small bowl. Pour this sauce over the chicken and veggies, stirring to combine.
5. Add cashews into the pan. Toss everything together and cook for another 2 minutes.
