Ingredients
– 800 g sweet potatoes
– 250 ml heavy cream
– 200 g shredded cheese
– 1 medium onion
– 2 garlic cloves
– 1 teaspoon salt
– 1 teaspoon black pepper
– 1 teaspoon fresh rosemary
– 1 tablespoon olive oil
– 50 g breadcrumbs
Method
1. Preheat your oven to 200°C (400°F).
2. Peel the sweet potatoes and slice them thinly.
3. Chop the onion and mince the garlic.
4. In a baking dish, layer the sweet potato, onion, garlic, and seasoning. Pour cream over the top and sprinkle with cheese.
5. Finally, add breadcrumbs and drizzle olive oil before baking for 30-40 minutes until golden and bubbly.
