Delicious Sweet Potato Shakshuka Recipe For Healthy Breakfast

Ingredients

– 2 medium sweet potatoes, peeled and diced
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 bell pepper, chopped
– 1 can (400 g) diced tomatoes
– 1 tsp ground cumin
– 1/2 tsp smoked paprika
– 4 eggs
– Fresh cilantro or parsley for garnish
– Salt and pepper to taste

Method

1. Start by heating some oil in a large pan over medium heat.
2. Add the onion, bell pepper, and garlic. Sauté until soft for about 5 minutes.
3. Mix in the diced sweet potatoes along with the cumin and smoked paprika. Stir well.
4. Pour in the canned tomatoes and season with salt and pepper. Cook for around 15 minutes, until the sweet potatoes are tender.
5. Make small wells in the mixture and crack an egg into each. Cover the pan and cook until the eggs are set. Garnish with fresh cilantro or parsley before serving.
