Ingredients

– 2 medium sweet potatoes, peeled and diced

Method

1. Preheat the oven to 200°C. Line a baking tray with baking paper.
2. Toss the diced sweet potatoes with olive oil, salt, and pepper in a bowl. Spread them out evenly on the baking tray.
3. Roast sweet potatoes for 25-30 minutes, turning halfway, until they are tender and lightly browned.
