Ingredients
– 2 medium sweet potatoes, peeled and diced

– Pepper, to taste
– 4 large eggs
– Fresh parsley, for garnish
Method
1. Start by heating olive oil in a large skillet over medium heat.
2. Add the diced sweet potatoes and cook for about 10 minutes until they start to soften.
3. Stir in the chopped onion and red bell pepper. Continue cooking for another 5-7 minutes, stirring occasionally.
4. Season the mixture with smoked paprika, garlic powder, salt, and pepper. Cook until the potatoes are tender and slightly crispy.
5. In a separate pan, fry the eggs to your liking, then serve them on top of the sweet potato mixture. Garnish with chopped parsley.
