Delicious Sweet Potato Hash: A Healthy, Flavorful Breakfast Recipe

Ingredients

– 2 medium sweet potatoes, peeled and diced (about 500g)
– 1 red onion, chopped
– 1 red bell pepper, diced
– 2 tablespoons olive oil
– 1 teaspoon smoked paprika
– 1 teaspoon garlic powder
– Salt, to taste
– Pepper, to taste
– 4 eggs
– Fresh parsley, chopped (for garnish)

Method

1. Heat olive oil in a large frying pan over medium heat.
2. Add sweet potatoes, stirring occasionally, and cook for about 10 minutes until they start getting soft.
3. Stir in the onion and bell pepper. Season with smoked paprika, garlic powder, salt, and pepper. Cook until veggies are tender.
4. Create four small wells in the mixture and crack an egg into each one. Cover the pan and let it cook until egg whites firm up, about 5 minutes.
5. Sprinkle with fresh parsley before serving.
