Sweet Potato Gnocchi Recipe
Ingredients
2 medium sweet potatoes
1 ½ cups all-purpose flour
1 large egg
½ teaspoon salt
¼ teaspoon ground nutmeg
¼ teaspoon ground black pepper
2 tablespoons olive oil
1 tablespoon chopped fresh sage
½ cup grated parmesan cheese
Fresh basil leaves for garnish
Method
1. First, preheat your oven to 200°C. Pierce the sweet potatoes with a fork and bake them for about 45 minutes, or until tender.
2. Once cooked, let the sweet potatoes cool slightly. Then peel them and mash them in a bowl.
3. Add flour, egg, salt, nutmeg, and pepper to the bowl. Mix until a soft dough forms.
4. Divide the dough into sections and roll each piece into long ropes. Cut them into small pieces and make a groove in the center with a fork.
5. Boil a large pot of water. Cook the gnocchi in batches until they float, which takes about 2-3 minutes. Toss with olive oil and sage before serving.
