Ingredients
2 medium sweet potatoes (about 500g)
1/2 cup plain flour
1/2 cup breadcrumbs
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
1/4 tsp salt
1/4 tsp black pepper
1 large egg
Olive oil for greasing
Method
1. Start by preheating the oven to 200°C (390°F) if you are baking.
2. Peel and chop the sweet potatoes into small pieces.
3. Cook them in boiling water until they are soft, about 15 minutes.
4. Drain the potatoes and mash them in a bowl. Mix in flour, breadcrumbs, garlic powder, onion powder, paprika, salt, pepper, and the egg.
5. Form the mixture into small patties and place them on a greased baking sheet. Brush the tops with a little olive oil. Bake for 20-25 minutes or until golden brown.
