Delicious Sweet Potato Crème Brûlée Recipe For Dessert Lovers

Ingredients

– 2 medium sweet potatoes (about 500g)
– 1 cup cream
– 1 cup milk
– 3/4 cup sugar
– 4 large egg yolks
– 1 teaspoon vanilla extract
– 1/4 teaspoon salt
– 2 tablespoons brown sugar
– Cooking spray
– Water (for the baking dish)

Method

1. Preheat the oven to 160°C (320°F). Spray four ramekins with cooking spray and set them in a baking dish.
2. Cook the sweet potatoes by boiling or baking until soft. When cool, scoop the flesh into a bowl and mash well.
3. In a saucepan, mix cream, milk, sugar, vanilla, and salt over medium heat. Stir until the sugar dissolves and the mixture is warm but not boiling.
4. Whisk the egg yolks gently in a separate bowl. Gradually add the warm cream mixture into the yolks, whisking continuously to avoid cooking the eggs.
5. Combine the sweet potato puree with the yolk mixture. Pour the mixture evenly into the ramekins. Fill the baking dish with water until it reaches halfway up the sides of the ramekins. Bake for 30-35 minutes until set. Cool slightly, then sprinkle brown sugar on top and caramelize with a torch or broiler before serving.
