Delicious Sweet Potato Casserole Recipe With Marshmallow Topping

Ingredients

– 4 medium sweet potatoes
– 60 ml maple syrup
– 60 ml almond milk
– 1 teaspoon vanilla extract
– 1 teaspoon cinnamon
– 1/2 teaspoon salt
– 1/2 cup oats
– 1/4 cup chopped pecans
– 2 tablespoons coconut oil
– 1 tablespoon brown sugar

Method

1. Preheat your oven to 180°C.
2. Peel and chop the sweet potatoes, then boil them until they’re soft. Drain the water.
3. Mash the sweet potatoes in a bowl. Mix in the maple syrup, almond milk, vanilla extract, cinnamon, and salt.
4. In another bowl, combine the oats, pecans, coconut oil, and brown sugar. Mix until combined.
5. Spread the sweet potato mixture in a baking dish and sprinkle the oat mixture on top. Bake for about 25-30 minutes until golden.
