Ingredients
– 1 cup rice flour
– 1/2 cup grated coconut
– 1/2 cup jaggery (or brown sugar)
– 1/2 tsp baking soda
– 1/4 tsp salt
– 1/2 cup water
– 1/4 tsp cardamom powder
– 1 tbsp ghee or oil (for frying)
– 1/2 cup milk (optional)
– 1/4 cup chopped nuts (like almonds or cashews)
Method
1. Start by mixing the rice flour, grated coconut, jaggery, baking soda, and salt in a bowl.
2. Add water gradually to create a thick batter. Stir until everything is well combined.
3. Blend in the cardamom powder and, if using, pour in the milk for extra richness.
4. Heat a paniyaram pan on medium heat and grease the holes with ghee or oil.
5. Fill each hole with the batter and cook until golden brown on both sides. Flip carefully for even cooking.
