Ingredients

– 300 g pasta (any type you like)
– 1 tablespoon olive oil
– 1 cup corn kernels (fresh or frozen)
– 2 garlic cloves (minced)
– 1 cup cherry tomatoes (halved)
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 cup fresh basil leaves
– 60 g grated cheese (optional)
– 1/2 lemon (juiced)

Method

1. Start by bringing a large pot of salted water to boil. Add the pasta and cook according to the package instructions until al dente.
2. While the pasta is cooking, heat olive oil in a skillet over medium heat. Add corn and minced garlic, cooking for about 5 minutes, until fragrant.
3. Stir in the cherry tomatoes, salt, and pepper, cooking for another 3-4 minutes until the tomatoes start to soften.
4. Once the pasta is ready, drain it and add to the skillet with the corn mixture. Toss everything together well.
5. Finish by mixing in fresh basil and lemon juice. If you like cheese, sprinkle it on top before serving.
