Ingredients
– 500g chicken breast, diced

– 1 bell pepper, chopped
– 1 onion, sliced
– 2 cloves garlic, minced
– 1/2 cup pineapple chunks
– 1/2 cup sugar
– 1/2 cup vinegar
– 1/2 cup soy sauce
– 1 tablespoon cornstarch mixed with 2 tablespoons water
Method
1. Heat the oil in a large pan over medium-high heat.
2. Add the chicken and cook until browned, about 5 minutes.
3. Toss in the onion, garlic, and bell pepper, stirring until they soften.
4. Mix in the pineapple, sugar, vinegar, soy sauce, and cornstarch mixture. Bring to a simmer and cook for another 5 minutes until thickened.
5. Serve the sweet and sour chicken over rice or noodles.
