Ingredients
4 slices of crusty bread
2 cups of assorted fresh tomatoes, chopped
200 ml of extra virgin olive oil
1 clove of garlic, minced
1 tsp of salt
1 tsp of black pepper
1 cup of fresh basil leaves
1 cup of ricotta cheese
1 lemon, juiced
¼ cup of balsamic vinegar
Method
Toast the slices of bread until they are golden brown.
Combine the chopped tomatoes with garlic, salt, and pepper in a bowl.
Drizzle half of the olive oil over the tomato mixture, then add the lemon juice.
Spread ricotta cheese evenly over each slice of toasted bread.
Top the bread with the tomato mixture, then drizzle remaining olive oil and balsamic vinegar.
