Delicious Summer Salad With Goat Cheese, Apricots & Raspberry Dressing

Ingredients
120 g goat cheese
100 g fresh apricots, halved
50 g raspberries
80 ml olive oil
30 ml balsamic vinegar
1 tablespoon honey
100 g mixed salad greens
Salt, to taste
Pepper, to taste
1 tablespoon chopped mint

Method
Combine raspberries, olive oil, balsamic vinegar, and honey in a bowl.
Use a fork to mash the raspberries and mix everything well.
Place mixed salad greens on a serving plate.
Top the greens with apricot halves, goat cheese, and drizzle the raspberry dressing over the salad.
Sprinkle chopped mint, and season with salt and pepper before serving.
