Ingredients
– 125 g unsalted butter, softened
– 150 g sugar
– 1 large egg
– 1 teaspoon vanilla extract
– 250 g plain flour
– 1 teaspoon baking powder
– 1/4 teaspoon salt

Method
1. Preheat your oven to 180°C. Line a baking tray with baking paper.
2. In a bowl, cream together the softened butter and sugar until light and fluffy.
3. Beat in the egg and vanilla extract, mixing well.
4. Gradually add the flour, baking powder, and salt. Stir until combined.
5. Scoop tablespoon-sized amounts of dough onto the prepared tray. Bake for about 10-12 minutes or until the edges are lightly golden.
