Ingredients
– 4 medium sweet potatoes
– 400 ml canned black beans, rinsed and drained
– 1 cup cooked corn
– 1 avocado, diced
– 1 red bell pepper, diced
– 1 teaspoon ground cumin
– 1 teaspoon paprika
– Salt and pepper to taste
– Fresh cilantro, for garnish
– Juice of 1 lime
Method
1. Preheat your oven to 200°C. Wash the sweet potatoes and poke holes in them with a fork.
2. Bake the sweet potatoes for about 45 minutes or until they’re soft.
3. In a bowl, mix the black beans, corn, bell pepper, cumin, paprika, salt, and pepper together.
4. Cut the baked sweet potatoes in half and scoop out some flesh to make space for the filling.
5. Spoon the bean mixture into the sweet potatoes. Top with avocado, cilantro, and lime juice.
