Ingredients
– 4 medium sweet potatoes
– 400 g black beans, rinsed
– 1 tsp olive oil
– 1 tsp cumin
– 1 tsp smoked paprika
– 1 avocado, diced
– 1 cup corn kernels, fresh or frozen
– 60 g feta cheese, crumbled
– Salt and pepper to taste
– Fresh cilantro for garnish
Method
1. Preheat the oven to 200 degrees Celsius. Wash the sweet potatoes and pierce them a few times with a fork. Place them on a baking tray.
2. Bake the sweet potatoes for about 45 minutes until they are soft.
3. While they are baking, heat olive oil in a pan over medium heat. Add black beans, cumin, and smoked paprika. Cook for about 5 minutes, stirring occasionally.
4. Once the sweet potatoes are done, remove them from the oven. Cut each potato in half lengthwise and fluff the insides with a fork.
5. Stuff each sweet potato with the black bean mixture. Top with corn, avocado, feta cheese, and garnish with cilantro. Season with salt and pepper.
