Ingredients
– 1.5 kg pork loin
– 1 cup fresh spinach
– 1/2 cup pesto
– 1/2 cup dried cranberries
– 1/2 cup chopped pecans
– 2 tablespoons olive oil
– 1 teaspoon salt
– 1 teaspoon black pepper
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
Method
1. Preheat the oven to 190°C (375°F).
2. Carefully cut a slit in the pork loin lengthwise without cutting all the way through.
3. In a bowl, mix spinach, pesto, cranberries, and pecans. Stuff this mixture into the pork loin.
4. Rub olive oil, salt, pepper, garlic powder, and onion powder on the outside of the pork.
5. Place the pork in a baking dish and cook for about 1 hour, or until the internal temperature reaches 70°C (160°F).
