Delicious Stuffed Pork Loin With Bacon And Sun-Dried Tomatoes

Ingredients

  • 1 pork loin (1 kg)
  • 200 g bacon, chopped
  • 100 g sun-dried tomatoes, chopped
  • 150 g mushrooms, diced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 50 ml olive oil
  • 1 tsp dried herbs (mixed)
  • Salt and pepper to taste

Method

  1. Preheat your oven to 180°C (350°F).
  2. Heat olive oil in a pan and cook the onion, garlic, and mushrooms until soft.
  3. Add bacon and sun-dried tomatoes, cooking for a few more minutes.
  4. Mix in breadcrumbs and herbs. Season with salt and pepper.
  5. Stuff the pork loin with the mixture and bake for about 40-60 minutes until cooked through.
