Ingredients
- 1 pork loin (1 kg)
- 200 g bacon, chopped
- 100 g sun-dried tomatoes, chopped
- 150 g mushrooms, diced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 50 ml olive oil
- 1 tsp dried herbs (mixed)
- Salt and pepper to taste
Method
- Preheat your oven to 180°C (350°F).
- Heat olive oil in a pan and cook the onion, garlic, and mushrooms until soft.
- Add bacon and sun-dried tomatoes, cooking for a few more minutes.
- Mix in breadcrumbs and herbs. Season with salt and pepper.
- Stuff the pork loin with the mixture and bake for about 40-60 minutes until cooked through.
