Ingredients
– 1 pork loin (about 1.5 kg)
– 150 g bacon, diced
– 100 g sun-dried tomatoes, chopped
– 200 g mushrooms, chopped
– 1 onion, chopped
– 3 garlic cloves, minced
– 1 cup spinach, wilted
– 1 tsp dried oregano
– 1 tsp salt
– 1 tsp pepper
Method
1. Preheat the oven to 180°C (350°F).
2. Heat a frying pan and cook the diced bacon until crisp. Remove it from the pan and drain on paper towels.
3. In the same pan, sauté onion, garlic, and mushrooms until soft. Add sun-dried tomatoes, spinach, oregano, salt, and pepper. Mix well and let it cool.
4. Cut a pocket in the pork loin to hold the filling. Stuff the pork with the vegetable mixture and bacon. Use kitchen twine to tie the loin securely.
5. Place the stuffed pork in a baking dish and roast for about 1 hour or until the internal temperature reaches 70°C (160°F). Let it rest before slicing.
