– 4 large capsicum peppers
– 500 g minced beef
– 1 cup cooked rice
– 1 can diced tomatoes (400 ml)
– 1 small onion, chopped
– 1 teaspoon garlic powder
– 1 teaspoon paprika
– Salt and pepper to taste
– 1 cup shredded cheese
– 2 tablespoons olive oil

Method

1. Preheat your oven to 190°C (375°F).
2. Cut the tops off the capsicum peppers and remove the seeds. Place them in a baking dish.
3. Heat olive oil in a pan over medium heat. Add chopped onion and cook until soft.
4. Stir in minced beef, garlic powder, paprika, salt, and pepper. Cook until the meat is browned.
5. Mix in cooked rice and diced tomatoes. Stuff the capsicum peppers with the mixture. Top with shredded cheese and bake for 25-30 minutes until the peppers are tender.
