Ingredients

– 250g strawberries, diced
– 350g plain flour
– 450g granulated sugar
– 250ml milk
– 125g unsalted butter, softened
– 4 large eggs
– 15g baking powder
– 500g cream cheese
– 250ml thickened cream
– 50g icing sugar

Method

1. Preheat the oven to 180 degrees Celsius. Grease and flour two round cake pans.
2. Mix the flour, baking powder, and sugar in a large bowl. In a separate bowl, whisk together milk, eggs, and softened butter.
3. Combine both mixtures and stir until smooth. Fold the diced strawberries into the batter to distribute evenly.
4. Pour the mixture into the prepared pans. Bake for 30-35 minutes or until a skewer comes out clean. Let cool for 10 minutes before removing from the pans.
5. Beat the cream cheese and icing sugar until fluffy. In another bowl, whip the thickened cream until stiff peaks form. Fold the whipped cream into the cream cheese mixture. Spread evenly on cooled cakes.
