Ingredients
- 500g beef steak
- 2 cups cooked rice
- 1 can black beans (400g) drained and rinsed
- 1 cup corn (frozen or canned)
- 1 large avocado, diced
- 1 cup cherry tomatoes, halved
- 100g shredded cheese
- 50ml lime juice
- 30ml olive oil
- 1 tablespoon chipotle sauce
Method
- Cook the rice according to the package instructions.
- Season the beef with salt and pepper, then grill or pan-fry it for about 4 minutes on each side for medium-rare.
- While the steak cooks, prepare the chipotle dressing by mixing lime juice, olive oil, and chipotle sauce in a bowl.
- Once cooked, let the steak rest for a few minutes before slicing it into strips.
- To assemble the burrito bowls, layer rice, black beans, corn, avocado, cherry tomatoes, cheese, and sliced steak in bowls. Drizzle with the chipotle dressing.
