Ingredients
1 cup plain flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup sugar
1/2 cup milk
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1 cup frozen mixed berries
1 tablespoon lemon juice
Method
Preheat the oven to 180°C (350°F) and grease a baking dish.
In a large mixing bowl, combine flour, baking powder, and salt.
Whisk together sugar, milk, vegetable oil, eggs, and vanilla extract in a separate bowl.
Pour the wet mixture into the dry ingredients and mix until just combined.
Gently fold in the frozen berries and lemon juice. Pour the batter into the prepared dish, then bake for about 30 minutes or until a toothpick comes out clean.
