Ingredients
– 1 pie crust
– 1 tablespoon olive oil
– 1 small onion, chopped
– 200 g fresh spinach
– 200 g feta cheese, crumbled
– 4 large eggs
– 250 ml milk
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/4 teaspoon nutmeg
Method
1. Preheat the oven to 180°C (350°F). Place the pie crust in a pie dish.
2. Heat olive oil in a pan over medium heat. Add the chopped onion and cook until soft.
3. Stir in the spinach and cook until just wilted. Remove from heat and let cool.
4. In a bowl, whisk together eggs, milk, salt, pepper, and nutmeg. Mix in the cooled spinach and onion, then fold in the feta cheese.
5. Pour the mixture into the pie crust. Bake for 30–35 minutes until the filling is set and golden.
