Ingredients
– 2 cups whole wheat flour
– 1/2 teaspoon salt
– 1 tablespoon oil
– 1/2 cup warm water
– 1 can black beans (400g)
– 1 cup corn
– 1 avocado
– 1 cup cherry tomatoes
– 1/2 cup shredded cheese
– 1 tablespoon taco seasoning
Method
1. Combine the whole wheat flour and salt in a bowl.
2. Mix in the oil and gradually add warm water to form dough.
3. Split the dough into 8 small balls. Roll each ball into thin circles.
4. Cook the circles on a hot pan for about 2 minutes on each side.
5. Fill each roti with black beans, corn, diced avocado, cherry tomatoes, cheese, and taco seasoning.
