Ingredients
– 400g tempeh, crumbled
– 2 tablespoons olive oil
– 2 tablespoons soy sauce
– 1 teaspoon smoked paprika
– 1 teaspoon garlic powder
– 1 teaspoon chili powder
– 1 cup cooked quinoa
– 2 cups fresh spinach
– 1 avocado, sliced
– ½ cup cherry tomatoes, halved
Method
1. Heat olive oil in a large pan over medium heat.
2. Add the crumbled tempeh and cook until it turns golden brown.
3. Stir in soy sauce, smoked paprika, garlic powder, and chili powder. Cook for another 3-4 minutes.
4. In a bowl, layer the cooked quinoa, fresh spinach, and cooked tempeh.
5. Top with sliced avocado and cherry tomatoes.
