Ingredients

  • 4 chicken thighs (boneless, skinless)
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 400 ml coconut milk
  • 200 g broccoli (cut into florets)
  • 1 red bell pepper (sliced)
  • 2 cups cooked brown rice
  • Fresh coriander (for garnish)

Method

  1. Heat the olive oil in a large pan over medium heat.
  2. Season chicken thighs with smoked paprika, garlic powder, and chili powder. Cook each side for 5–7 minutes until golden and cooked through.
  3. Pour in the coconut milk and add the broccoli and red bell pepper. Stir well.
  4. Bring the mixture to a simmer and cook for another 10 minutes, allowing the vegetables to soften.
  5. Serve the chicken and veggies over cooked brown rice. Garnish with fresh coriander.
