Ingredients
- 4 chicken thighs (boneless, skinless)
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 400 ml coconut milk
- 200 g broccoli (cut into florets)
- 1 red bell pepper (sliced)
- 2 cups cooked brown rice
- Fresh coriander (for garnish)
Method
- Heat the olive oil in a large pan over medium heat.
- Season chicken thighs with smoked paprika, garlic powder, and chili powder. Cook each side for 5–7 minutes until golden and cooked through.
- Pour in the coconut milk and add the broccoli and red bell pepper. Stir well.
- Bring the mixture to a simmer and cook for another 10 minutes, allowing the vegetables to soften.
- Serve the chicken and veggies over cooked brown rice. Garnish with fresh coriander.
